Sexiest Cheese Dip Recipe Ever!
What is football without some awesome cheese dip? The two seem to go hand in hand like Sonny and Cher, or Abbot and Costello or Scooby and Shaggy!
Well, let me get to the point here. I have the ultimate cheese dip recipe that will knock your socks off and even your kiddos will love it! It has less calories, a flavor that well......like I said, will knock your socks off and it makes your Rotel Cheese Dip go further! Enough said.....I'll get to the recipe!
1-2lb Block of Velveeta Cheese Original
2- 10 oz cans of Diced Rotel Tomatoes
Pour both cans of tomatoes into crock pot and cut up Velveeta cheese and combine.
2 Medium Onions, diced
2 Red Bell Peppers, diced
3 Large Anaheim Peppers, diced
Saute diced veggies in a small amount of olive oil until they are thoroughly cooked and translucent.
So this is where you are going to think that I have lost my mind because you are going to have as much if not more pepper mixture than cheese mixture. Bear with me.....I was worried too, but it works out!
Remove from skillet and puree in a food processor until they just aren't recognizable!
Add peppers and onions to cheese dip and let the flavors meld together. Stir in crock pot ever so often while cheese is melting.
There are a couple of variations to this that I have used.
Instead of Original Velveeta, Try Queso Blanco and add 1/2 box frozen spinach to the crock pot. Keep the veggies the same!
Also, if you like the taco flavor, you can add a package of taco seasoning to the dip.
You can also purée the Rotel with the veggies if you have picky eaters that are afraid of veggies
You will never go back to the old way of making cheese dip again!
